The Skin of the Potato

     The skin of a potato contains 50% of the antioxidant activity of the entire potato. The fiber in the skin also slows digestion and lowers the glycemic value. Unfortunately, commercial potatoes are treated with anti-sprouting compounds which both toxic and nutritional antagonists.
